Κλίμα:
Ημι-ηπειρωτικό με σημαντικές χιονοπτώσεις και ζεστό, ξηρό καλοκαίρι με δροσερές νύχτες. Συχνή εμφάνιση βορειοδυτικών ανέμων, απουσία ανοιξιάτικου παγετού.

Τρύγος:
Συλλογή σε μικρά κιβώτια και σε ατμόσφαιρα ελεγχόμενης ψύξης.

Στρεμματική Απόδοση:

Οινοποίηση:
Αποβοστρύχωση, απουσία θλιπτηρίου, προζυμωτική κρυοεκχύλιση, αλκοολική ζύμωση σε αυξητικά διαβαθμισμένες θερμοκρασίες, παραμονή του κρασιού για επτά μήνες στις οινολάσπες του με περιοδική ανάδευση.

Παλαίωση:
Δώδεκα μήνες σε γαλλικά δρύινα βαρέλια και κατ’ ελάχιστο δώδεκα μήνες σε φιάλες.

Οργανοληπτικά χαρακτηριστικά:
Λαμπερό, ρουμπινί χρώμα με βιολετί ανταύγειες. Έντονο, τυπικό μπαχαρώδες μπουκέτο (βανίλια, πιπέρι, γαρύφαλλο), με νύξεις ώριμου βατόμουρου. Γεμάτο στόμα, με αρώματα κόκκινων φρούτων, βανίλιας, και νύξεις ξύλου. Στρογγυλές τανίνες, ισορροπημένη οξύτητα. Μακρά επίγευση με νότες κυδωνιού.
