Ποικιλιακή Σύνθεση:

Οινοποίηση / Παλαίωση:
Αποβοστρύχωση, απουσία θλιπτηρίου, προζυμωτική κρυοεκχύλιση, αλκοολική ζύμωση σε αυξητικά διαβαθμισμένες θερμοκρασίες. Παραμονή του κρασιού για μεγάλο χρονικό διάστημα στις οινολάσπες του με περιοδική ανάδευση. 18 μήνες σε νέα γαλλικά δρύινα βαρέλια και 12 μήνες στη φιάλη πριν την εμπορική του κυκλοφορία. Δε φιλτράρεται και δεν υφίσταται απολύτως καμία κατεργασία πριν την εμφιάλωση.
Γευστικά χαρακτηριστικά:
Λαμπερό, βαθύ ρουμπινί χρώμα με βιολετί ανταύγειες. Έντονο και πολύπλοκο μπουκέτο, γήινο, με νότες κόκκινων φρούτων, αποξηραμένου δαμάσκηνου και πιπεριού. Γεύση γενναιόδωρη, βελούδινη, στρογγυλή, ισορροπημένη, μεστή, με νότες βανίλιας, δρυός και μόκας. Η επίγευση χαρακτηρίζεται από τη γευστική ισορροπία και τις ώριμες τανίνες, τη μακρά παραμονή των αρωμάτων του στα οποία κυριαρχούν οι νότες μπαχαρικών και αποξηραμένων φρούτων του δάσους. Ένας εξαιρετικός οίνος παλαίωσης.
Αρμονία:
Συνδυάζεται αρμονικά με κόκκινα κρέατα, ψητά ή με πλούσιες σάλτσες, γλυκές ή πικάντικες, τριχωτό κυνήγι και κρεατόπιτες. Γραβιέρα Κρήτης, μπάτζος ή κεφαλογραβιέρα σαχανάκι.
