Ποικιλιακή Σύνθεση:
Ξινόμαυρο 100%. Έτος φύτευσης 1919, διαμορφωμένα σε κύπελλο.

Οινοποίηση / Παλαίωση:
Αποβοστρύχωση, απουσία θλιπτηρίου, προζυμωτική κρυοεκχύλιση 4 ημερών, αλκοολική ζύμωση με χρήση ιθαγενούς ζυμοχλωρίδας, επιλεγμένης και απομονωμένης από το ίδιο αμπελοτεμάχιο, σε αυξητικά διαβαθμισμένες θερμοκρασίες και παραμονή του κρασιού για 24 μήνες στις οινολάσπες του με περιοδική ανάδευση. 24 μήνες σε επιλεγμένα, νέα, λεπτόκοκκα, γαλλικά δρύινα βαρέλια Allie – Jupilles, λευκού καψίματος (ατμός) και 12 μήνες στη φιάλη. Δε φιλτράρεται και δεν υφίσταται απολύτως καμία κατεργασία πριν την εμφιάλωση.

Γευστικά χαρακτηριστικά:
Λαμπερό ρουμπινί χρώμα με έντονα ερυθρές ανταύγειες. Σύνθετο μπουκέτο με χαρακτηριστικά αρώματα, μπαχαρικών, αποξηραμένου δαμάσκηνου και ντομάτας. Γεμάτο στόμα, εξαιρετικής ποιότητας φαινολικό δυναμικό, με ισορροπημένη οξύτητα και μακράς διάρκειας επίγευση. Οίνος με μεγάλες δυνατότητες παλαίωσης.

Αρμονία:
Συνδυάζεται με πλούσια κρέατα ψητά ή μαγειρεμένα σε πλούσια σάλτσα ντομάτας. Ψητά λουκάνικα, κρεατόπιτες και ώριμα τυριά λιπαρά, ελαφρώς πικάντικα.

Ιδανική απόλαυση στους 16-18° C.
