Οινοποίηση / Παλαίωση:
Αποβοστρύχωση, απουσία θλιπτηρίου, προζυμωτική κρυοεκχύλιση 4 ημερών, αλκοολική ζύμωση με χρήση ιθαγενούς ζυμοχλωρίδας, επιλεγμένης και απομονωμένης από το ίδιο αμπελοτεμάχιο, σε αυξητικά διαβαθμισμένες θερμοκρασίες με “pigeage” και παραμονή του κρασιού για 8 μήνες στις οινολάσπες του με περιοδική ανάδευση. 12 μήνες σε επιλεγμένα, νέα, λεπτόκοκκα, γαλλικά δρύινα βαρέλια Allie – Bertrange, λευκού καψίματος (ατμός) και 12 μήνες στη φιάλη. Δε φιλτράρεται και δεν υφίσταται απολύτως καμία κατεργασία πριν την εμφιάλωση.
Γευστικά χαρακτηριστικά:
Ένα κρασί μεγάλης αρωματικής έντασης, ισορροπίας και δομής. Βάθος και συγκέντρωση, ισορροπημένο με φρέσκια οξύτητα και μεταλλικό χαρακτήρα με την υπογραφή του terroir. Δελεαστικό μπουκέτο σύνθετων αρωμάτων που χαρακτηρίζεται από άγρια κεράσια, ήπια μπαχαρικά, σμέουρα και με την δροσερή οξύτητα του να ελκύει κάθε εκπαιδευμένο ουρανίσκο.
Αρμονία:
Συνδυάζεται με λευκά κρέατα όλων των ειδών, από κοτόπουλο έως γαλοπούλα, κουνέλι, ψητά ή μαγειρεμένα σε λεπτές, φίνες σάλτσες, χοιρινό φιλέτο και φτερωτό κυνήγι.
