Οινοποίηση / Παλαίωση:
Προζυμωτική εκχύλιση σε ελεγχόμενο περιβάλλον, αλκοολική ζύμωση, σε διαβαθμισμένες θερμοκρασίες, με χρήση ιθαγενούς ζυμοχλωρίδας, επιλεγμένης και απομονωμένης από το ίδιο αμπελοτεμάχιο, ωρίμαση σε λεπτόκοκκα γαλλικά, τύπου Tronçais, δρύινα βαρέλια λευκού καψίματος 225 lt, με περιοδική ανάδευση των οινολασπών για
7 μήνες.

Γευστικά χαρακτηριστικά:
Κρυστάλλινο, λαμπερό με υποκίτρινο χρώμα, με ελαφρά πρασινωπές ανταύγειες. Μύτη έντονη και πλούσια, τυπική της ποικιλίας, με αρώματα εσπεριδοειδών, φρούτων του πάθους και με γλυκιά χροιά πεπονιού στο τέλος σε φόντο βανίλιας. Στο στόμα είναι ιδιαίτερα γεμάτο, ηδύ, λιπαρό, με εξαιρετική ισορροπία-δροσιά, φινέτσα, και μεταλλικότητα. Ζωηρή και μακράς διάρκειας επίγευση.

Αρμονία:
Συνδυάζεται αρμονικά με λευκά κρέατα ή μοσχαράκι γάλακτος σε πλούσιες κρεμώδης σάλτσες, συνοδεία λαχανικών. Ψαρικά ωμά ή μαγειρεμένα σε λευκές σάλτσες, ζυμαρικά με λευκό κρέας και πλούσιες ημι-λιπαρές σάλτσες, καθώς και με καπνιστά ψαρικά.
