Οινοποίηση / Παλαίωση:
Αποβοστρύχωση, απουσία θλιπτηρίου, προζυμωτική κρυοεκχύλιση, αλκοολική ζύμωση με χρήση ιθαγενούς ζυμοχλωρίδας, επιλεγμένης και απομονωμένης από το ίδιο αμπελοτεμάχιο, σε αυξητικά διαβαθμισμένες θερμοκρασίες με “pigeage” και παραμονή του κρασιού για 12 μήνες στις οινολάσπες του με περιοδική ανάδευση. 18 μήνες σε επιλεγμένα, νέα, λεπτόκοκκα, γαλλικά δρύινα βαρέλια Allie – Bertrange, λευκού καψίματος (ατμός) και 18 μήνες στη φιάλη. Δε φιλτράρεται και δεν υφίσταται απολύτως καμία κατεργασία πριν την εμφιάλωση.
Γευστικά χαρακτηριστικά:
Λαμπερό, βαθύ πορφυρό χρώμα με βιολετί ανταύγειες. Έντονο και πολύπλοκο μπουκέτο, όπου κυριαρχούν τα μπαχαρικά και τα αποξηραμένα κόκκινα φρούτα αναμεμιγμένα με νότες δέρματος. Γεύση γενναιόδωρη, εξαιρετική δομή, στρογγυλή, με διακριτικά στοιχεία βανίλιας και ξύλου. Στο τελείωμά του, χαρακτηρίζεται από τη γευστική ισορροπία, τις ώριμες τανίνες καθώς και τη μακρά παραμονή αρωμάτων. Ένας εξαιρετικός οίνος παλαίωσης.
Αρμονία:
Συνδυάζεται με πλούσιας γεύσης κρέατα, ψητά ή με πολύπλοκες σάλτσες, μαγειρεμένα με λαχανικά, βολβούς και κρασί. Κυνήγια μαρινάτα, λευκά λιπαρά τυριά ωρίμανσης.
