Αμπελουργική ζώνη Αμυνταίου. "Χελώνες" & "Σκαντζόχοιρος". Το αμπελοτεμάχιο "Χελώνες", του ενιαίου ιδιόκτητου αμπελώνα, βρίσκεται σε υψόμετρο 660 μέτρων, με βορειοδυτικό προσανατολισμό, «βλέποντας» το όρος Βόρας, ενώ το αμπελοτεμάχιο “Σκαντζόχοιρος”, του ενιαίου ιδιόκτητου αμπελώνα βρίσκεται σε υψόμετρο 690 μέτρων, με βόρειο προσανατολισμό, "βλέποντας" την λίμνη των Πετρών και το όρος Βόρας.
Οινοποίηση / Παλαίωση:
Αποβοστρύχωση, απουσία θλιπτηρίου. Παραμονή για λίγες ώρες με τα στέμφυλα και κρυοεκχύλιση σε ελεγχόμενο περιβάλλον. Στην συνέχεια αλκοολική ζύμωση σε διαβαθμισμένες θερμοκρασίες. Παραμονή του κρασιού για 2 μήνες στις λεπτές οινολάσπες του με περιοδική ανάδευση.
Γευστικά χαρακτηριστικά:
Χρώμα έντονο ροζέ με ανταύγειες saumon. Μύτη φρουτώδης με πλούσια αρωματική έκφραση. Ιδιαίτερα ισορροπημένο στόμα, αρκετά γεμάτο, λιπαρό, με εκφραστική επίγευση.
Αρμονία:
Συνδυάζεται αρμονικά με παραδοσιακές Ελληνικές γεύσεις. Γεμιστές πιπεριές και ντομάτες, πιπεριές Φλωρίνης ψητές, σαλάτες, ζυμαρικά σε ελαφρές κόκκινες σάλτσες, πίτσες, αλλά και με εξωτικές κουζίνες και κρύες ντοματόσουπες.
