Ποικιλιακή Σύνθεση:
Syrah 100%.

Περιοχή / Αμπελοτόπι:
Αμπελουργική ζώνη Αμυνταίου.
"Χελώνες" σε υψόμετρο 640-650 μέτρων, με βορειοδυτικό προσανατολισμό, «βλέποντας» το όρος Βόρας.

Οινοποίηση / Παλαίωση:
Αποβοστρύχωση, απουσία θλιπτηρίου, κρυοεκχύλιση σε ελεγχόμενο περιβάλλον, αλκοολική ζύμωση σε διαβαθμισμένες θερμοκρασίες. Παραμονή του κρασιού για 3 μήνες στις οινολάσπες του με περιοδική ανάδευση. Αρχικά για 12 μήνες σε επιλεγμένα νέα γαλλικά δρύινα λεπτόκοκκα βαρέλια «μετρίου» καψίματος και στη συνέχεια για τουλάχιστο 15 μήνες στη φιάλη προ της διάθεσης στην αγορά.

Γευστικά χαρακτηριστικά:
Λαμπερό, βαθύ ρουμπινί χρώμα με βιολετί ανταύγειες. Έντονο και πολύπλοκο μπουκέτο, γήινο, με νότες κόκκινων φρούτων του δάσους και πιπεριού.
Γεύση γενναιόδωρη, βελούδινη, στρογγυλή, ισορροπημένη, μεστή, με νότες βανίλιας και μόκας. Στο τελείωμά του, χαρακτηρίζεται από την ισορροπημένη και τη διακριτική τανικότητά του, τη μακρά παραμονή των αρωμάτων του στα οποία κυριαρχεί η καραμέλα βουτύρου. Ένας εξαιρετικός οίνος παλαίωσης.

Αρμονία:
Συνδυάζεται αρμονικά με ζουμερά κόκκινα κρέατα, σαρκώδη μανιτάρια ψημένα στη σχάρα, αρνί στο φούρνο, κυνήγι «φτερό», και ώριμα μαλακά τυριά, μέτριας έντασης.
