Ποικιλιακή Σύνθεση:
Η επιλογή του οινοποιού. Τα κορυφαία 17 βαρέλια κάθε σοδειάς στα οποία ο οινοποιός επιλέγει να παρουσιάσει την απόλυτη έκφραση και δυναμική της Αμπελουργικής ζώνης Αμυνταίου.

Περιοχή / Αμπελοτόπι:
Αμπελουργική ζώνη Αμυνταίου.
"Αμπέλια", υψόμετρο 630-690 μέτρων, με βόρειο προσανατολισμό, "βλέποντας" την λίμνη των Πετρών και το όρος Βόρας.

Οινοποίηση / Παλαίωση:
Αποβοστρύχωση, προζυμωτική κρυοεκχύλιση και στη συνέχεια κλασσική ερυθρή οινοποίηση σε απόλυτα ελεγχόμενες θερμοκρασίες.

Παλαίωση:
36 μήνες σε ειδικά επιλεγμένα γσλλικά δρύινα βαρέλια. 200% νέο βαρέλι (18 μήνες + 18 μήνες). Χωρίς κατεργασία και φιλτράρισμα πριν την εμφιάλωση και επιπλέον παλαίωση 18 μήνες στην φιάλη.

Γευστικά χαρακτηριστικά:
Πλούσιο, με έντονα χαρακτηριστικά ώριμων κόκκινων φρούτων του δάσους. Σύνθετο μπουκέτο με τυπικά και πολύπλοκα αρώματα. Ιδιαίτερα πλούσιες και εξαιρετικά δομημένες ώριμες τανίνες. Γευστική ισορροπία σε υψηλά επίπεδα που τελειώνει με ιδιαίτερα μεγάλη επίγευση. Ο αερισμός επιτείνει τα οργανοληπτικά του χαρακτηριστικά και για το λόγο αυτό προτείνεται η μετάγγισή του τουλάχιστον μία ώρα πριν το σερβίρισμά του.

Αρμονία:
Συνδυάζεται με πλούσια κρέατα, ψητά ή με πλούσιες σάλτσες, μαγειρεμένα με λαχανικά, βολβούς και κρασί. Κυνήγια μαρινάτα, σε συνδυασμό με κάστανα και δαμάσκηνα. Λιπαρά ή και παλαιωμένα τυριά, έντονης και πλούσιας γεύσης.

Ιδανική απόλαυση στους 16-18° C.
